After wolfing down several platters, and a gallon of the white cheese dip, I made a mental promise to find a way to get my hands on this Acapulco restaurant white cheese dip recipe. I prayed fervently, too, that this recipe isn’t a (well) guarded secret.

And guess what? Drum rolls please. Grace favored me somehow and here the secret Acapulco Restaurant White Cheese Dip Recipe I loved so much.

You’ll never guess the facts. It was more well-known as "Chili Con Queso". Yes, it does sound familiar now. While it was formally called white cheese dip, many menus refer it as Chili Con Queso and it’s not as obscure as one may think. In fact it appears on most Mexican menus nowadays. Though it’s a bit sour, sour cream isn’t an ingredient. So check out this Acapulco restaurant white cheese dip recipe.

Preparation: 1 cup of shredded Asadero cheese or Monterey Jack cheese

4 ounces of chopped Jalapenos OR 4 oz deveined and julienned Poblanos

1/4 cup of "half-and-half"

For you greenhorns out there, half-and-half means a mixture of half milk and half cream. So it has 10-12% milk fat and cannot be whipped.

2 tablespoon of finely chopped Onion

2 teaspoons of grounded Cumin

1/2 teaspoon of Salt

4 ounces of Green Chilies.

While some may make do without chilies, this Acapulco restaurant white cheese dip recipe requires having it. Chilies give it a distinctive Mexican flavor I guarantee you’ll love.

Cooking: Heat all ingredients on medium. Stir occasionally.

Of course you may simply call it white cheese dip.
